What will you be having for breakfast this mother's day? If you're in my close circle of friends I'm hoping that your answer is pancakes and that those particular pancakes are made from the home-made pancake mix that you bought from me this week to support my first Kilimanjaro/Make-A-Wish fundraiser (which was a truly incredible success - thank you very much!). Whether you bought pancake-mix or not and whether you'll be eating it this weekend or not, the home-made "Bisquick" mix that I used is definitely worth sharing.

The recipe comes from Kitchen Simplicity and can be used for pancakes OR biscuits. It includes butter or margarine so it needs to be kept in the fridge (where it will keep up to 6 weeks) or in the freezer (where it will keep longer - a few months).

It was super simple (as any decent pancake recipe should be) and I love the fact that I now have some in my fridge. Making a pancake breakfast on Saturday morning just became so much more likely - Who am I kidding? We almost have pancakes for breakfast on Saturday morning and it has way more to do with the fact that Brandon is the one making them than anything else. At least it will be easier for him this week!

It's pretty safe to say that I know the recipe by heart after making so much of the mix for my fundraiser (fifty 1-litre jars and over twenty 500ml jars).  Read this if you're interested in my lessons learned from my first official fundraiser...

Recipe for pancake mix:
(1) Mix together: 5 cups flour, 2 tablespoons sugar, 1/4 cup baking powder, and 1 teaspoon salt
(2) Cut in: 1 cup margarine or butter until mixture is crumbly. 
(3) Store in an airtight container, in fridge, for up to 6 weeks.

To make pancakes:
(1) Measure 2 cups of home-made pancake mix
(2) Add: 2 eggs and 1 cup of milk
Optional: add fruit (blueberries are classic) or chocolate chips to mix things up!
(3) Cook in frying pan over medium/high heat until golden on both sides

Enjoy the fluffy (and yummy) pancakes with your choice of toppings. Personally I love bananas and authentic maple syrup. Yum.

They were weren't they... We've tried so many different pancake recipes and I really did like this one more than most.
